Rice Many Ways
      serves 4
      
        Ingredients
        
            - 1 C short grain white rice
 
            - cooking liquid (water or broth, see package for amount)
 
            - 1 t	salt
 
            - 1 T butter
 
        
        Options
        
            - Lemon juice and zest, grated
 
            - Parmesan cheese, grated
 
            - mushrooms, sliced and sautéed
 
            - peas, blanched
 
            - lemon, goat cheese and thyme
 
            - bacon, sautéed mushrooms and spinach
 
            - lime juice and cilantro
 
        
       
      
        Instructions
        
            - Bring the cooking liquid, rice and salt to a boil in a covered pot, stirring occassionaly. Remove from heat, leave covered and undisturbed for 10 minutes.
 
            - Add butter and stir until melted, season to taste, then stir in the options.
 
            - Plate and serve.
